How To Make Panzanella aka my favourite salad...
Stale bread torn into croutons
Super ripe tomatoes - chunked, even better if they're squidgy
Celery - chopped
Onion - red, sliced
Olives - handful
Basil - fresh, torn
Plenty of olive oil and vinegar (white wine, Sherry, red wine, cider all work)
Layer it up. Toss it all together.
Leave it for a while so the wet stuff soaks into the bread and makes it the most delicious thing you've ever tasted in salad world.
Tuck in.
Best use for old bread and squishy tomatoes we know. Even better the next day.
