Pickle Your Redcurrants - Kitchen Mojo
Anyone else always left wondering what to do with redcurrants. Here's our answer - pickle them. Here's the super easy recipe we use for Pickled Cherries and it works for any soft fruit. Pickled redcurrants, blackcurrants, plums, damsons, strawberries, blueberries...

Rinse your fruit and pop it in a clean jar (put jar through the dishwasher). For c500g of fruit put 175ml cider vinegar, 175ml water and 100g of caster sugar in a saucepan and heat until sugar has dissolved. Pour over fruit and make sure it's covered. Add some whole spices if you want to - orange zest, juniper, cinnamon or cloves all go well with redcurrants. Put the lid on and leave for a week before digging in. Great with cheese, ham and over ice cream... Don't throw away the pickling liquor, use it in drinks. Try it and let us know how you get on!
