Crunchy Breadcrumb Ice Cream Topping

If you like ice cream and you've got some bread that needs using here's a quick and tasty topping to pimp your vanilla!

Toss a couple of handfuls of breadcrumbs (brown, grain and sourdough make for particularly tasty) with a couple of pinches of cinnamon (optional), two teaspoons of sugar and a pinch of salt.  Heat a frying pan and with about 50- 75g of butter/ tbsp olive oil and fry your mix until it is crispy.  Top your ice cream. 
I keep breadcrumbs in the freezer for ice cream and other emergencies.
