Soy Marinated Eggs

The inspiration for these delicious eggs came from Momofuku.  Iif you like going down a cookbook rabbit hole this is a good one!  Great as a side with noodles or topping for laksa or noodle soup.

To make soy marinated eggs

  1. Boil six eggs - hen or duck are good.  Timings - 6 minutes for hen, 8 for larger duck, 4 for smaller.
  2. Mix 175ml of light soy sauce 30ml sherry vinegar or shaoxing wine in a Tupperware that will just fit your eggs.
  3. Once boiled remove eggs and run under cold water until you can handle them.
  4. Peel them (tap pointy end first for a cleaner peel). Pop into the mixture of light soy sauce and vinegar/ shaoxing wine and leave overnight.  
Will keep in fridge for a week if you don't eat them all before then... And remember, this isn't Cool Hand Luke.
