Purple Sprouting & Stilton Quiche
If you're looking for something to do with your steamed sprouting (other than eat it straight out of the saucepan/ fridge) we recommend this quiche.
- Shortcrust Pastry - shop bought is fine. Here's a link if you want to make your own. I used egg yolk instead of milk/ water because I had some to use up.
- Steamed Sprouting
- Cheese - Stilton, Feta or whatever you've got in the fridge
- Eggs x 3
- Double Cream - 150ml
- Salt & Pepper to season
Preheat oven to 180
Put pastry in quiche or pie tin, prick bottom and blind bake for 15 minutes - I put a piece of baking paper on top of the pastry and fill with dry chickpeas (which I keep in a jar and re-use).
Tip if you are making your own pastry - roll it between two pieces of baking paper and then just remove the top bit and flip it into the tin.
Fill the quiche with your sprouting, put cheese on top (grated or cubed), combine eggs with cream add salt and pepper. Pour over sprouting.
Bake for 25- 30 minutes.
